2009 CROCODILES LAIR / KAAIMANSGAT CHARDONNAY

The Cape fold mountains are no better displayed than in the splendour of this magnificent settling surrounding the Kaaimansgat vineyard. It nestles in the Elandskloof Valley behind the village of Villiersdorp where the Chardonnay grapes are amongst the latest to ripen in the Cape. This late ripening is effected by the parallel mountain ranges which reduce the length of the diurnal. The uniqueness of this terroir is illustrated by particularly fine small berried fruit which offer a high skin-to-juice ratio.
Fresh and lively with added flavour development progressing over three years of bottle maturation. Prepared in classic Burgundian fashion and then matured sur lie for eight months in traditional 228 litre pieces!
Packed with minerally tight fruit flavours of pear, peaches and litchis resting on over-laying hints of oak, vanilla and autolized yeasts. Strong nutty components will evolve over time to create complexity and enhanced flavours. Enjoy with poultry, casseroles and richer fish dishes!
